¡Que delicioso! Your Colombian dining experience just got supersized!
The beloved Colombian restaurant, Super Rico, has been through many phases. It started as a food truck in 2011 on Pine Street and served Colombian burgers, hot dogs and empanadas to downtown, late-night crowds. It was then that the family-owned business discovered the downtown scene was missing a niche market of authentic Colombian food with an American twist.
“We all agree we discovered a special passion that has motivated us to keep growing Super Rico,” Super Rico co-owner Steven Snyder said.
In 2013, the family acquired the small space on Central Boulevard across from the fire station, and, by mid-May 2019, Super Rico officially re-opened its new and improved store.
“We expanded the restaurant by tearing down the wall that separated us from the place next door in order to create one big open space,” Snyder said. “We upgraded the look and feel with a new logo, new designs and new offerings, including a draft-beer station, sparkling wine, new coffee machine and TVs for live-sports games.”
Super Rico is a true family owned-and-operated business. Snyder, who is a UCF alumnus, works with his mother, Marcela Gutierrez, and stepfather, Raleigh Thompson, who are all co-owners of Super Rico.
“It’s been a long journey, but we are very proud and excited about the next phase of Super Rico. Our food is inspired by our family’s own recipes, ranging from burgers and hot dogs to arepas and rice bowls. We strive to offer each guest a unique experience by using the freshest ingredients prepared to the highest standards and delivered with exceptional service. We hope to expand someday to other locations, starting with the UCF area. We are open to any suggestions from our customers.”
Super Rico will still have all the meals regulars have come to enjoy and love and will add a few more with the expansion. A customer-favorite: The Rico Bowl comes with white rice, black beans, lettuce, tomato and choice of ribeye steak, chicken or veggies and sauce. It’s fully customizable, with additions like guacamole, pickled onions, bacon, corn and more.
